This wine displays great tension and laser-like precision, featuring notes of white peach, acacia, white mushroom, and wildflowers, all underscored by an abundance of minerality. On the palate, it offers good volume, texture, and acidity, with umami-rich fresh apples, kelp, and lady pink apples. Complex and versatile, it pairs beautifully with spiced dishes and can cellar well through 2035+.

The 2021 Chablis Blanchot Grand Cru comes across as too reductive on the nose, obscuring the terroir expression. The palate is medium-bodied with quite a lot of extract on the pithy opening. The acidity is well-judged, and I appreciate the spiciness on the finish. Given the palate's showing, I feel that the SO2 will be addressed with bottle age, and this could end up being a fine Blanchot in the context of the growing season.
